But don’t you worry, this gluten free and dairy free Overnight Chia Seed Pudding Parfait is about to make things a lot easier…and tastier! You can whip up this recipe in just 5 minutes, stick it in the fridge overnight and wake up to a delicious breakfast. If you are anything like me, you might be hesitant to try chia seed pudding. I kept seeing other people make it but didn’t think that it would taste good so I continued my search for new breakfast recipe ideas. Eventually I gave in and tried it and my only regret is that I didn’t do so sooner. My favorite way to eat chia seed pudding is to load it up with ALL the toppings. Like to the point where you could ask me if I have enough chia seed to go with my toppings. The nice thing about the toppings in this recipe is that most of them are considered superfoods, meaning that they not only taste great but they are also good for you. It’s a win-win and that, my friends, is a pretty kick ass way to start your day!
How to Make this Overnight Chia Seed Pudding Parfait Recipe
Chia Seed Pudding Parfait Ingredients
Not only is this recipe easy and delicious but it is also simple. So simple that you only need three ingredients! To make this chia seed pudding parfait, you will need 2 cups of coconut milk, 1/2 cup of chia seeds and 1 Tablespoon of vanilla extract. There is an option to add 1-2 Tablespoons of maple syrup to sweeten it. However, I personally don’t think it is necessary when you add all the toppings. I just like to let you know that you can add this if you prefer a sweeter chia seed pudding.
You will also need the toppings, which in my opinion make this recipe what it is. My favorite toppings are cacao nibs, sunflower seeds, walnuts, strawberries, blueberries and hemp hearts. However, you can add whatever you would like! Remember, the more toppings the better!

Ready to make the easiest recipe in the world? Okay, let’s do it. Grab a medium sized container and pour in the coconut milk, vanilla extract and chia seeds. Whisk together until all three ingredients are combined. Let sit for 1 minute and then use a spoon to stir everything together again. Put a lid on the container and place in the refrigerator overnight. When you are ready to enjoy this recipe, scoop the chia seed pudding in a bowl and add your favorite toppings.

Ingredients
- Chia Seed Pudding:
2 cups coconut milk (or any other dairy free milk)
1/2 cup chia seeds
1 Tablespoon vanilla extract
**Optional ingredient: 1-2 Tablespoons of maple syrup (see note below)
- Toppings:
Sunflower seeds
Walnuts
Strawberries
Blueberries
Directions
- Pour the coconut milk, vanilla extract and chia seeds in a medium sized container. Whisk together until all the ingredients are combined. Let sit for 1 minute and then use a spoon to mix again. Place a lid on top of the container and store in the refrigerator overnight.
- Scoop about 1/2 cup of chia seed pudding into a bowl and top with strawberries, blueberries, cacao nibs, hemp hearts, sunflower seeds and walnuts. I don’t include measurements for the toppings as this is preference and you can add as much or as little as you want!
Notes
- I don’t add the maple syrup to this recipe when I make it because I think the toppings make this chia seed pudding parfait sweet enough. However, if you prefer your chia seed pudding sweeter you can add the maple syrup to the ingredients in step one.
