Let me be real for a second. Before becoming a mom, I spent so much more time in the kitchen. Since having my sweet baby boy, I am still in the kitchen BUT it looks so much different. Chances are that I am trying to cook a meal while simultaneously making sure he is not trying to take off the air conditioning vent or play in our dog’s water bowl or rip off the blinds or climb the pantry cabinets!

I truly wouldn’t change it for the world but it makes me want quick and easy recipes so my focus can be back fully on him. That’s why I love this gluten free BBQ chicken sandwich so much. It is seriously such an easy recipe to make while also still tasting great. I want less time in the kitchen but not less flavor and that’s exactly what you get with this recipe. It’s quick and easy to make and will leave your taste buds very satisfied!

How to Make Open Face BBQ Chicken Sandwich

  1. To start, preheat the air fryer to 400 degrees.
  2. Mix the shredded chicken and BBQ sauce in a small bowl. Layer it evenly over the bread and top each piece of bread with a slice of cheese.
  3. Air fry for 3 minutes and enjoy! Yes, it really is that easy! 🙂

  1. Air fryer (I have the Gourmia 7 Quart Digital Air Fryer and love it)
  2. Small mixing bowl
  3. Tongs
  4. Slotted spatula

Ingredients

  • 2 pieces of Gluten Free Bread (my two favorite brands are Canyon Bakehouse and Rudi’s Bakery)

  • 2 slices of cheddar cheese

  • 1 cup shredded chicken (already cooked)

  • 4 Tablespoons BBQ sauce

Directions

  • Preheat the air fryer to 400 degrees. Mix together the shredded chicken and BBQ sauce in a small bowl.
  • Layer the BBQ shredded chicken evenly over the bread and top each piece of bread with a slice of cheese. Air fry for 3 minutes and enjoy!

Notes

  • This recipe makes two open face sandwiches so the serving size is 1-2 depending on how hungry you are!
  • Please note that this recipe calls for shredded chicken that is already cooked. I like to cook the chicken in the crockpot in the beginning of the week and have it whenever I need it. I also freeze any leftover shredded chicken so I can easily use it in the future. You could also use a rotisserie chicken (my gluten free people just be cautious of this option and make sure it is gluten free and no cross contamination/contact).
