You can meal prep this recipe on the weekend or night before and wake up to a nutrient packed breakfast. Chia seeds are one of those foods that tend to be labeled as a superfood because it contains large amounts of fiber, omega-3 fatty acids, proteins, minerals and antioxidants. So not only do you get to enjoy that classic chocolate and peanut butter taste but you get to do so while knowing that you are fueling your body with nutrient dense foods.

You don’t need many ingredients to make this Healthy Reese Chia Seed Pudding. If following a gluten free and/or dairy free diet, just makes sure all of the ingredients are gluten and dairy free!
- Coconut milk (or any other dairy free milk)
- Chia seeds
- Vanilla extract
- Peanut butter
- Apple
- Cacao nibs
How to Make Chia Seed Pudding Paleo Friendly
The only part about this recipe that does not follow a paleo friendly diet is the peanut butter. Therefore, if you want to enjoy this delicious breakfast while on the paleo diet, simply replace the peanut butter with another nut butter. You could use almond butter, sun butter, cashew butter or any other one that you prefer!
How to Make Healthy Chia Seed Pudding
I don’t think there is an easier recipe to make on my blog. Add the coconut milk, chia seeds and vanilla extra to a medium sized container and whisk together. Let sit for about a minute and then use a spoon to stir together, making sure to scrape the sides of the container. Cover the container with a lid and place in the refrigerator overnight. The next morning, scoop out the chia seed pudding and top with peanut butter, cacao nibs and cut up apple slices. Yes, this recipe is really that simple to make!

Ingredients
2 cups coconut milk
1/2 cup chia seeds
1 Tablespoon vanilla extract
2 apples
Peanut butter (drizzle as much as you want on top)
Cacao nibs (sprinkle as much as you want on top)

- Add the coconut milk, chia seeds and vanilla extract to a medium sized container and whisk until combined. Let sit for 1 minute and then use a spoon to stir together. Cover the container with a lid and place in the refrigerator overnight. The next morning, scoop out the chia seed pudding and top with peanut butter, cacao nibs and apple slices.
