Although I often miss regular sandwich bread and buns, I have found that potatoes make a great substitute. They are just as delicious as bread and can hold all your favorite fillings, like this homemade sloppy joe recipe! I love the way the fluffy baked potato soaks up the gluten free sloppy joe sauce. It has all the comfort food feels of the original recipe yet is made with real ingredients.

Ingredients:

  • Ground turkey
  • Russet potatoes
  • Dijon mustard
  • Tomato sauce
  • Red onion
  • Tomato paste
  • Garlic powder
  • Salt
  • Green Pepper
  • Coconut aminos
  • Apple cider vinegar
  • Cumin
  • Extra virgin olive oil

How to Make Homemade Sloppy Joes

  • Step one: Preheat the oven to 400 degrees. Rinse the potatoes, poke holes in them using a fork and then place them on the rack in the oven. Bake the potatoes at 400 degrees for 45 minutes.
  • Step two: When there is 20 minutes left on the potatoes, begin making the sloppy joe filling. Start by dicing the onion and green pepper. Heat the extra virgin olive oil in the skillet and add the diced onion. Cook the diced onion until it becomes translucent then add the ground turkey to the skillet and brown.
  • Step three: Mix together the Dijon mustard, tomato sauce, tomato paste, garlic powder, salt, coconut aminos, apple cider vinegar, cumin and water. Add this sauce and the diced green pepper to the skillet. Continue to cook on medium heat for 6-8 minutes. Remove the potatoes from the oven, use a knife to slice them in half and top with the sloppy joe filling.

If you have left overs, you can store them in an air tight container in the refrigerator for up to five days. If you don’t want to eat the left overs within the week, you can also freeze them. When you are ready to eat the left overs, simply reheat them in the microwave.
