This Pork Tenderloin Sheet Pan Dinner makes dinner easy and delicious. The pork tenderloin is seasoned with turmeric and ginger and served with roasted potatoes and carrots. This recipe is gluten free, grain free, and dairy free.

Pork Tenderloin Sheet Pan Dinner (Grain Free & Gluten Free)

There is nothing easier than a sheet pan dinner. This recipe is as simple as seasoning the pork, cutting the potatoes and carrots and letting the oven do the rest! It’s perfect for a busy weeknight dinner or when you just don’t feel like spending a lot of time in the kitchen.

The seasoned pork tenderloin is cooked in the oven until it is tender and juicy. It is paired with a turmeric mayo dipping sauce that is slightly sweet and spicy and compliments the flavors of the pork. If you aren’t a fan of mayo, you can skip this step. I love this dipping sauce but my husband prefers to dip his pork in applesauce.

Ingredients:

  • Pork tenderloin
  • Rainbow carrots
  • Tri-colored potatoes
  • Extra virgin olive oil
  • Salt
  • Pepper
  • Ginger
  • Turmeric
  • Paprika
  • Dijon mustard
  • Mayo
  • Lemon juice
  • Honey

How to Make Pork Tenderloin Sheet Pan Dinner

Step One: Make the pork

Preheat the oven to 375 degrees. Mix together the ginger, turmeric, paprika, salt, pepper, extra virgin olive oil and Dijon mustard. Place the pork tenderloin on a large sheet pan and spread the sauce on top covering the pork. Cook the pork in the oven for 45 minutes.

Step Two: Make the potatoes & carrots

Cut the potatoes and place them in a bowl with the carrots, extra virgin olive oil, salt and pepper. Toss until the carrots and potatoes are evenly coated. Add to the sheet pan with the pork and continue to cook for 40 minutes.

Step Three: Make the dipping sauce

Mix together the mayo, turmeric, ginger, paprika, salt, lemon juice and honey. Keep in the refrigerator until the pork, potatoes and carrots are finished.

  • Pork Loin:
  • 1.5 lbs pork tenderloin

  • 1 teaspoon ginger

  • 1/2 teaspoon turmeric

  • 1/8 teaspoon paprika

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 Tablespoon extra virgin olive oil

  • 1/2 teaspoon Dijon mustard

  • Potatoes and Carrots:
  • 4 cups tri-colored potatoes

  • 1 bag (12 oz) rainbow carrots

  • 1.5 Tablespoons extra virgin olive oil

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • Dipping Sauce:
  • 1 cup mayo

  • 1/4 teaspoon turmeric

  • 1/8 teaspoon ginger

  • 1/16 teaspoon paprika

  • 1/4 teaspoon salt

  • 1 teaspoon honey

  • 1 teaspoon lemon juice

Directions
