Paleo Chicken Quesadilla with Nacho Queso

This Paleo Chicken Quesadilla with Nacho Queso is a deliciously easy dish that only takes 10 minutes to make! Two crispy almond flour tortillas are packed with tender shredded chicken, tomatoes, avocados, peppers and a dairy free cheesy nacho queso. It’s an easy, healthy and delicious lunch or dinner option that is gluten free, grain free & dairy free!

Cheesy Quesadilla Without the Dairy

You can’t have a quesadilla without that cheesy filling that holds all the ingredients together. This Paleo Chicken Quesadilla makes this classic recipe dairy free by using Siete Food’s cashew nacho queso. The queso ingredients are Paleo, gluten free, grain free, vegan, dairy free and soy free. This product also happens to be certified gluten free which is always a bonus!

Can I use a Different Brand of Tortillas?

The answer to this question is yes and maybe. Of course you don’t have to use Siete Food’s almond flour tortillas. However, I haven’t tried this recipe with any other brand so, therefore, I can’t say if another brand will hold together well. Gluten free tortillas tend to be less durable so this may be an issue if you try other brands. I love the Siete almond flour tortillas because out of all the ones I’ve tried they taste the best, hold together well and are the perfect size for a personal quesadilla.

Where to Find the Ingredients

The tomatoes, chicken, green pepper, avocado, salt, pepper and cumin should be easily found at your local grocery store. Here is where I would recommend finding the remaining ingredients if they aren’t at your local grocery store. Note that these are based on my location and may differ depending on where you live.

  • Siete Almond Flour Tortillas: I can usually find these at Giant, Wegmans or Whole Foods. If you can’t find them there, you can also buy them directly from Siete Foods online.
  • Siete Cashew Nacho Cheese: This queso can also be found at Giant, Wegmans or Whole Foods. But, again, if you can’t find them there check Siete Food’s website. They also have a section to search your area for where to find it in stores. Amazon is always a choice too but it tends to be expensive.
  • Ghee: I can usually find a variety of options at my local food store in the organic/gluten free/natural section. However, if your store doesn’t carry ghee, you can also get it from Vitacost. It’s usually where I get my favorite brand- 4th & Heart Grass-Fed Ghee.

How to Make Shredded Chicken

This recipe calls for shredded chicken so I wanted to include four simple ways to cook the chicken.

  1. Crockpot: this is my preferred method as I think it makes the best tender and juicy shredded chicken. Simply add the chicken to the crockpot with 1 cup of chicken broth. Cook on low heat for 6-8 hours.
  2. Instant pot: Place the chicken in the Instant Pot with 1 cup of chicken broth. Select pressure cook and set the timer for 10 minutes. Let the pressure naturally release for 5 minutes and then shred.
  3. Boiling: Add the chicken to a large pot and fill with water until the chicken is covered. Cook on high heat until the water is boiling, then reduce to simmering for 15 minutes.
  4. Rotisserie: This is obviously the easiest option as you can buy a rotisserie chicken at the grocery store and then shred it. Just be careful if you are gluten free as sometimes cross contamination can be an issue with this option!

The directions for each option above are based on cooking 4 chicken breasts. Time will vary if you cook more or less.

This Paleo Chicken Quesadilla with Nacho Queso is so easy to make! Just follow the two simple steps below to enjoy this delicious recipe.

Step One: Prep the Ingredients

Start by dicing the tomato, avocado and green pepper. Add the chicken, tomatoes, peppers, avocado, salt, pepper and cumin to a medium sized bowl and mix together.

Step Two: Cook & Enjoy

Add the ghee to the skillet on high heat. Spread 1 Tablespoon of the nacho queso on each tortilla. Once the ghee is melted, place the first tortilla in the skillet with the cheese facing up. Add the chicken filling and top with the second tortilla with the plain side facing up. Reduce to medium heat and cook for 2 minutes on each side.

Ingredients

  • 2 Siete Foods almond flour tortillas

  • 2 Tablespoons Siete Foods Cashew Nacho Queso

  • 1/4 cup diced tomatoes

  • 1/2 cup cooked shredded chicken

  • 2 Tablespoons diced green peppers

  • 1/2 teaspoon ghee (or extra virgin olive oil for dairy free)

  • 1/4 of an avocado

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon cumin

Directions

  • Dice the tomato, avocado and green pepper. Add the chicken, tomatoes, peppers, avocado, salt, pepper and cumin to a medium sized bowl and mix together.

Notes

  • If your shredded chicken is very juicy, pat with a paper towel before mixing with the other ingredients. If it is too moist is will get the tortillas wet and then they won’t get as crispy or be as durable.
