These Paleo Breakfast Tacos are a healthy, delicious and easy way to start your day. With just 30 minutes, you can meal prep this recipe so that you have a quick and filling breakfast the rest of the week. This recipe is gluten free, grain free, dairy free, sugar free and egg free.
I love breakfast but it’s often the meal that I struggle with the most when coming up with new ideas. Before needing to follow a gluten free diet, my go to breakfast was either a bowl of cereal or oatmeal. Now things look a little different, but that doesn’t mean breakfast is boring in my house. Actually, it’s the opposite since I’m always testing out new recipes like these Paleo Breakfast Tacos. Chicken, veggies and a taco like seasoning wrapped up in a grain free tortilla makes for a delicious, healthy and satisfying breakfast!
Ingredients:
- Ground chicken
- Cauliflower rice
- Bell peppers
- Scallions
- Red cabbage
- Siete Almond Flour Tortillas
- Chili powder
- Cumin
- Pepper
- Paprika
- Garlic powder
- Salt
- Lime juice
- Toppings: avocadoes, lettuce and lime juice
How to Make Paleo Breakfast Tacos
Tacos are made to be a simple, easy recipe and these breakfast tacos are no exception. Let’s jump into the steps for how to make this recipe so you can start enjoying these tacos! Start by cutting the bell peppers, cabbage and scallions and set aside. Place the ground chicken in a large skillet and brown on high heat. If needed, drain the chicken once browned. Add the frozen cauliflower rice and continue to cook on medium-high heat until the cauliflower is defrosted.
Once the cauliflower is defrosted, add in the chili powder, cumin, pepper, paprika, garlic powder, salt, lime juice and water and thoroughly combine with the meat and cauliflower rice. Cook on medium heat for 6 minutes or until the water is soaked up. Add the cut up bell peppers, cabbage and scallions and continue to cook on medium-low heat for 7 minutes. While this is cooking, heat up the tortillas. I like to add one tortillas to a small skillet and heat for 30-60 seconds on each side. Serve the tacos with avocadoes, lettuce and lime juice.

Paleo Breakfast Tacos (Egg Free)

2lbs ground chicken (or ground turkey)
2 cups frozen cauliflower rice
3 colored bell peppers
1 cup red cabbage
1/4 cup diced scallions
- Seasoning:
1/2 teaspoon chili powder
1 Tablespoon cumin
1/4 teaspoon pepper
1/4 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
Juice of 1/2 lime
1.5 cups water
- Toppings (optional):
Diced avocadoes
Shredded lettuce
Lime Juice
Directions
- Start by cutting the bell peppers, cabbage and scallions then set aside. Place the ground chicken in a large skillet and brown on high heat. Once the chicken is browned, add the frozen cauliflower rice and continue to cook on medium-high heat until defrosted.
- Add the chili powder, cumin, pepper, paprika, garlic powder, salt, lime juice and water to the skillet and cook on medium heat for 6 minutes. Add the bell peppers, cabbage and scallions and continue to cook for 7 minutes.
- Heat the almond flour tortillas on the stovetop in a small skillet. Add one tortilla and cook for 30-60 seconds each side on medium-high heat. Add the taco filling and top with avocadoes, lettuce and lime juice.
Notes
- One serving includes two tortillas and one cup of taco filling.
