Am I the only one who thinks the best part of backyard barbeques is the sides that everyone brings? I think I could live off of just eating sides and snacks for the rest of my life. This Homemade Potato Salad is so simple to make and is sure to be a crowd pleaser. Even if you don’t plan on going anywhere or sharing it with anyone, this recipe is the perfect side dish to your next meal.
What Makes this Homemade Potato Salad Different from the Rest?
If you’d type in ‘potato salad’ into Google, thousands of recipes would pop up. So, what makes this Homemade Potato Salad stand out from the rest? The best part about this recipe (in my opinion) is that the mayo doesn’t take over the rest of the ingredients. I like mayo, but I also want to taste the potatoes, bacon, onions and spices. Therefore, I tested this recipe several times to find the perfect ratio of mayo to all the other ingredients. The end result is a delicious side dish that is loaded with complimentary flavors.

It makes me happy when I can create a gluten free recipe for you all that consists of simple ingredients. If eating gluten free isn’t new to you, then you know that sometimes we have to get creative and use more complex ingredients to get the taste or texture of our long lost gluten foods. But this Homemade Potato Salad uses simple ingredients that you can easily find at your local grocery store.
- Red potatoes
- Bacon
- Red onion
- Fresh chives
- Dijon mustard
- Apple cider vinegar
- Mayo (my favorite brand of Whole 30 compatible mayo is Primal Kitchen)
- Salt
- Pepper
- Garlic powder
- Dill weed
How to Make Homemade Potato Salad
Step One: Boil the Potatoes
Add water to a large pot and bring to a boil. Once boiling, add the potatoes (whole and skin on) and cook for about 45 minutes or until the potatoes are soft when poked with a fork.
Step Two: Cook the Bacon
Cook the bacon following your preferred method. The easiest way is to microwave it, cooking for 30 seconds for each slice of bacon (so 6 slices of bacon would be 3 minutes) then adding more time in 30 second increments until it is cooked to your desired crispiness. You could also skip this step and use bacon bits for an easier option. Although I think real bacon tastes better in this recipe.
Step Three: Dice the Onion + Chives
Dice the onion and chives and set aside.
Step Four: Combine & Enjoy!
Drain the water from the potatoes and place the potatoes in a large bowl. Gently mash the potatoes but not as much as you would if you were making mashed potatoes. For this potato salad, you want there to still be chunks of potatoes like a regular potato salad has. Add the salt, pepper, bacon, chives, red onion, garlic powder, Dijon mustard, apple cider vinegar, mayo and dill weed and use a spoon to gently stir to combine. This potato salad tastes great warm or cold!

7 medium sized red potatoes
1/2 cup chopped bacon (about 6 pieces)
1/4 cup diced red onion
2 teaspoon fresh chives
1/2 teaspoon Dijon mustard
1 teaspoon ACV
1/4 cup mayo (make sure it is whole 30 approved if following)
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon dill weed
