Ham and Cheese Stromboli (Dairy, Gluten & Grain Free)

This Ham and Cheese Stromboli is the perfect lunch, dinner or appetizer for your next party! It’s loaded with ham and melted dairy free cheese and wrapped up in a crispy yet soft crust that’s gluten free and grain free.

To me, food is more than just nourishing the body. It’s about family, friends, gatherings, and the conversations and memories shared around the food. When I was growing up, we would get Stromboli from the local pizza place and it was always my favorite. Not only was the Stromboli delicious, but thinking about it takes me back to simpler times, summer nights, and my childhood home.

I wanted to recreate the taste of the local Stromboli by using ingredients that don’t contain any gluten, grains or dairy. I honestly never expected it to turn out as good as it did. With each bite, you get a combination of melted cheese, ham and a crispy yet soft crust. Dipping it in the marinara sauce is optional, but makes it just that much better in my opinion! My fellow celiac disease warriors (or anyone with diet restrictions) will understand me when I say that this is one of those recipes that made me tear up because it made me forget about eating gluten free. It tasted like I was enjoying that Stromboli from my childhood and it doesn’t get much better than that!

The best part about this Ham and Cheese Stromboli is that you can customize it any way you like. For example, you could add more ham and cheese. Or you could change up the ratios of the ham and cheese if you like one better than the other. You could also try adding different types of meats like salami, capocollo or pepperoni. You will just want to make sure you don’t add too much that you won’t be able to close the Stromboli! My personal preference is to keep it plain and simple and so I use the following ingredients.

Ingredients:

  • Dairy free provolone cheese (I use the Daiya brand)
  • Thinly sliced deli ham
  • Tapioca flour (my favorite brand is Bob’s Red Mill)
  • Almond flour (my favorite brand is the Bob’s Red Mill)
  • Xanthan gum
  • Salt
  • Egg
  • Extra virgin olive oil
  • Water
  • Italian Seasoning
  • Marinara sauce (optional, but highly recommended)

How to Make Ham and Cheese Stromboli

  1. Preheat oven to 375 degrees. Mix together the tapioca flour, almond flour, salt, and xanthan gum making sure there are no large clumps. Add the egg, extra virgin olive oil, and water and combine using a hand mixer. Roll the dough into a ball, wrap it with plastic wrap and place it in the refrigerator for 10 minutes. The dough will be much stickier than regular dough and this is why it needs to be put in the refrigerator.
  2. Spread tapioca flour on the counter and place the dough on top. Add more tapioca flour to the top of the dough and the rolling pin. Start to roll out the dough, continuing to add tapioca flour often to avoid sticking. Roll the dough until it is 1/4 inch thick then transfer it to the baking pan. Do this slowly to make sure it is not stuck to the counter.
  3. Place 4 pieces of cheese in the middle of the dough, followed by the 8 pieces of ham. Top the ham with the remaining 4 pieces of cheese. Fold the sides up so that the ham and cheese are completely covered. Wet your fingers if needed to smooth out the top. Sprinkle with salt and Italian seasoning and bake in the oven at 375 degrees for 30 minutes. If you want a crispy top (I would highly recommend it) bake for an additional 5 minutes at 425 degrees.

Ingredients

  • 8 pieces of dairy free provolone cheese (such as Daiya)

  • 8 pieces of thinly sliced deli ham (or any other meat you want to add)

  • Marinara sauce (for dipping)

  • Stromboli Crust:
  • 1/3 cup + 2 Tablespoons tapioca flour

  • 1 3/4 cups almond flour

  • 1/4 teaspoon xanthan gum

  • 1 teaspoon salt

  • 1 egg

  • 2 Tablespoons extra virgin olive oil

  • 1/4 cup water

  • 1 teaspoon Italian seasoning

Directions

  • Preheat the oven to 375 degrees. Mix together the tapioca flour, almond flour, xanthan gum, and salt making sure there are no clumps. Start to roll out the dough, adding tapioca flour often to make sure it does not stick to the rolling pin or counter. Continue to roll the dough until it is about a 1/4 inch thick. Transfer the dough to the baking sheet. Place 4 pieces of cheese in the middle of the dough followed by the 8 pieces of ham. Top the ham with the remaining 4 pieces of cheese. Fold the sides so that the ham and cheese are completely covered. Wet your fingers if needed to smooth out the top. Sprinkle the top with salt and Italian seasoning. Bake at 375 degrees for 30 minutes. If you want the top to get crispy, finish by baking at 425 degrees for 5 minutes.

Notes

  • The dough will be much stickier than regular dough and this is why it needs to be put in the refrigerator. When you take it out, it still will be stickier than you are probably used to but adding the tapioca flour to roll it out will be helpful.
