Gut Health: What’s Soup Got to Do with It?

When I was learning everything I could about healing my gut, I became aware of how healing and nourishing soups can be. One of the reasons soups can help support the gut is because the vegetables are thoroughly cooked. This makes them much easier to digest compared to raw vegetables. Furthermore, if you use the right type of broth it can be full of collagen which some research has shown that it can support the gut lining and help reduce inflammation.

Soups also take the stress of out cooking! When I was feeling my worst, I didn’t want to spend hours in the kitchen. Soups made my life easier because I could throw ingredients in my crockpot and come back to a delicious soup that I could enjoy the rest of the week. The less stressed I was, the stronger my digestion could be. I think it is important to note that everyone and every body is different so it is important to listen to your body and do your own research!

In addition to the benefits soup can have on digestion, I love this Gut Healing Crockpot Chicken Soup because the ingredients are so simple. This recipe calls for a minimal amount of ingredients and they can easily be found at the grocery store!

  • Chicken
  • Carrots
  • Celery
  • Chicken Bone Broth (my favorite brands are Kettle & Fire, Bonafide and Imagine)
  • Cauliflower rice
  • Seasonings: salt, pepper, parsley and scallions

How to Make Gut Healing Crockpot Chicken Soup

This recipe literally couldn’t be any easier to make! I love meal prepping this soup on the weekend so that I have a delicious, healthy and easy lunch or dinner the rest of the week.

  1. To start, place the chicken in the bottom of the crockpot. I like to butterfly the chicken breasts before putting them into the crockpot but this is an optional step. I find that the chicken gets even more tender and juicy this way.
  2. Cut the carrots, scallions and celery and add them to the crockpot on top of the chicken.
  3. Add the bone broth, salt, pepper, parsley, water and cauliflower rice and stir with a spoon. Cook on low heat for 6 hours.
  4. Remove the chicken and shred it with a fork. Place the shredded chicken back into the crockpot with the remaining ingredients, stir together and enjoy!

  • What crockpot should I use? You can use any crockpot, just make sure it is at least 6 quarts so that you can fit all the ingredients. You can view the crockpot I use and love here.
  • Can I freeze this chicken soup? Absolutely! Simply add the soup to a freezer Ziploc bag and store in the freezer until you are ready to enjoy it again.
  • What bone broth should I use? There are many bone broth options out there. You can find a homemade recipe or buy it in the store. My favorite store bought brands are Kettle & Fire, Bonafide and Imagine.

Ingredients

  • 3 large chicken breasts

  • 3 cups carrots

  • 2 cups celery

  • 4 cups chicken bone broth

  • 2 teaspoons salt

  • 2 Tablespoons parsley

Directions
