Everything…and I mean everything…is better with cream cheese frosting. I could easily eat this frosting all by itself (and often do as I’m making this recipe)! But it is even better when it’s paired with a homemade gluten free graham cracker crust and all your favorite fruit! I consider myself to be a humble person, especially when it comes to the recipes I make. However, this one is so good that it’s even difficult for me to be humble about it. Each bite is filled with a combination of sweet, slightly salty and that one of a kind cream cheese frosting taste. I don’t know how else to tell you that you simply need this recipe in your life!

How to Make Gluten Free Fruit Pizza Bars

Step One: Graham Cracker Crust

Start by preheating the oven to 350 degrees. Line a 9 by 7 (or 2 quart) glass baking dish with parchment paper and set aside. Place the sweet thins into a food processor and pulse until they become fine crumbs and add to a medium size bowl. Melt the butter and pour it into the bowl with the graham cracker crumbs. Use a wooden spoon to mix together. Pour the mixture into the baking dish and use your hands to spread out and firmly press down. Bake for 12 minutes then remove from the oven and let cool for 10 minutes before putting it in the refrigerator for at least 2 hours.

Step Two: Fruit

Once the graham cracker crust has been in the refrigerator for 2 hours, prep the fruit by cutting the strawberries and kiwis into small pieces and then set aside.

Step Three: Cream Cheese Icing

I would recommend using room temperature cream cheese and butter for this step but it will still work without it being room temperature. Add the cream cheese, butter and vanilla to a large bowl and mix using a hand mixer. Once these ingredients are somewhat combined, add 1/2 cup of confectioner’s sugar and continue to mix. The mixture will not be a frosting like texture yet but should look like large crumbs. When it reaches this consistency, add the last 1/2 cup of confectioner’s sugar and continue to mix. Mix until the frosting becomes a whipped consistency. This might take a few minutes so if you are wondering if you added the correct measurements, chances are you did but just need to give it more time to combine.

Step Four: Make the Bars & Enjoy

Remove the graham cracker crust from the refrigerator and scoop the cream cheese frosting on top. Use a knife to spread the frosting until the top is evenly covered. Add your fruit on top of the frosting in any design you would like. You can either serve immediately or store in the refrigerator until you are ready to serve. I personally like putting the bars back in the refrigerator for about 20 minutes so the cream cheese frosting thickens up a little bit. Whenever you are ready to serve these delicious bars, you can cut them using a chef’s knife. This recipe makes 12 bars. Enjoy!

Important Recipe Notes:

  1. I have only tested this recipe using the Honey Cinnamon Sweet Thins from Simple Mills. Therefore, if you decide to use gluten free graham crackers or regular graham crackers I am not sure how they will work with this recipe. I personally think that the sweet thins have the perfect taste for this recipe (and they happen to be made with better for you ingredients).
  2. Yes, you really need to let the graham cracker crust in the refrigerator for the full 2 hours! I can’t stress this enough, the crust will fall apart and not work out if you don’t follow this step. Trust me as I tried to cut corners many times and it never worked!

  • 1 (4.25 oz) box Simple Mills Honey Cinnamon Sweet Thins

  • 4 Tablespoons butter

  • Fruit:
  • 1 kiwi

  • 1/2 cup diced strawberries

  • 1/4 cup blueberries

  • 1/4 cup raspberries

  • Cream cheese frosting:
  • 2 oz. cream cheese
