This Dairy Free Chicken Cordon Bleu Casserole takes all the delicious flavors of this classic dish and combines them into one easy to assemble casserole. Layers of chicken, ham and potatoes are covered in a creamy dairy free cheese sauce and topped with breadcrumbs. This recipe is dairy free, gluten free and grain free!

What is Chicken Cordon Bleu?

I grew up on chicken cordon bleu but I realize that many people have not and probably are wondering what it is. Chicken Cordon Bleu is a dish that consists of meat (usually chicken) that is wrapped around cheese, coated in breadcrumbs and either pan fried or deep fried. There can be several variations to this, such as adding broccoli or ham (my favorite) to the cheese filling. How to Make Dairy Free Chicken Cordon Bleu Casserole

Ingredients:

Kitchen tools:

  • 9 by 13 casserole dish
  • Baking sheet
  • Food processor or blender
  • Wooden spoon
  • Cutting board and knife

Instructions:

  1. Preheat the oven to 375 degrees. Butterfly the chicken, sprinkle with 2 Tablespoons of Italian seasoning and cook at 375 degrees for 15-20 minutes until the chicken reaches an internal temperature of 160 degrees.
  2. Blend the almond flour crackers in a food processor or blender until they look like bread crumbs. Use a spoon to mix in the remaining 2 teaspoons of Italian seasoning and set aside. Add the cashews and hot water to a food processor or blender and set aside (do not blend yet). Cut the potatoes and ham into small pieces.
  3. When there is 5 minutes left on the chicken, add the nutritional yeast, salt, lemon juice, garlic powder, chicken broth, onion, Dijon mustard and paprika to the food processor with the cashews and water. Blend until it becomes a thick and creamy consistency.
  4. Remove the chicken from the oven and cut into cube sized pieces. Place the chicken, ham and potatoes in a 9 by 13 casserole dish. Pour the cashew cheese on top and gently mix around with a spoon. Sprinkle the bread crumbs on top. Bake at 375 degrees for 40 minutes.

How to Prepare this Meal Ahead of Time

To save time, you can prepare parts of this Dairy Free Chicken Cordon Bleu Casserole at an earlier time. Cooking the chicken ahead of time will save you about 20 minutes! Simply butterfly the chicken, sprinkle with Italian seasoning and cook at 375 degrees for 15-20 minutes until the chicken reaches an internal temperature of 160 degrees. You can also save time by preparing the breadcrumbs. Add the grain free almond flour crackers to a food processor or blender and blend until they look like crumbs. Place in an air tight bowl or container, add the remaining 2 teaspoons of Italian seasoning and mix together. This can be left in your pantry or counter until you are ready to make the rest of the dish!

  • Casserole filling:

  • 9 slices of deli ham

  • 4 cups diced red potatoes

  • 2 Tablespoons Italian seasoning

  • Cashew Cheese Sauce
  • 2 cups cashews

  • 1/4 cup nutritional yeast

  • 2 teaspoons salt

  • 1/4 cup lemon juice

  • 1 Tablespoon garlic powder

  • 1 cup hot water

  • 1 cup chicken broth

  • 1/2 sweet onion

  • 1 Tablespoon Dijon mustard

  • 1/4 teaspoon paprika

  • Bread Crumb Topping:
  • 1 box Simple Mills Almond Flour Crackers

  • 2 teaspoons Italian seasoning
