This Gluten Free Chicken Cordon Bleu recipe is comfort food at its best. Breaded tender chicken, melted cheese, and juicy ham all wrapped up in one delicious bite. This recipe is gluten free, dairy free, grain free, egg free, and refined sugar free.
My inspiration for this Gluten Free Chicken Cordon Bleu recipe goes all the way back to my childhood. One of my favorite meals growing up was a chicken cordon bleu with a side of mac and cheese. My mouth is watering just thinking about the way the melted cheese and ham are perfectly wrapped in the breaded chicken. This recipe recreates this heavenly combination by using almond flour bread crumbs and dairy free cheese. It’s gluten free, grain free, dairy free, egg free, and refined sugar free.
Although this Gluten Free Chicken Cordon Bleu recipe isn’t as easy as the frozen version I loved as a kid, it’s still pretty simple. To start off, preheat the oven to 350 degrees. Make the bread crumbs by mixing together the almond flour, Italian seasoning, salt, and pepper. Transfer the bread crumb mixture to a plate and set aside.
In order to easily roll the chicken, it needs to be as thin as possible. If you buy regular chicken breasts, you will need to butterfly them. However, if you buy the thin sliced chicken, you should skip this step. Lay out a piece of saran wrap that will be able to fit all six chicken breasts. Place the chicken breasts on the saran wrap and cover them with a second piece of saran wrap. Use a rolling pin to tenderize the chicken until it is thin. If you don’t have a rolling pin, use anything that is heavy enough to tenderize the chicken. Remember, the thinner the chicken breast is, the easier it is going to be to roll.
Each chicken breast is going to get one piece of cheese and two pieces of ham. Take a piece of cheese, break it in half, and place on the end of the chicken breast that is closest to you. Next, roll each piece of ham separately and place them on top of the piece of cheese. Roll the chicken breast starting at the end with the cheese and ham.
Once the chicken breast is wrapped around the ham and cheese, roll it into the bread crumbs and place it on a baking sheet. Repeat these steps for the remaining chicken breasts. Bake at 350 degrees for 40 minutes or until the internal temperature of the chicken is 165 degrees. To all my celiac people, remember that deli meat has an increased risk of containing gluten or being cross contaminated. My advice is to either find pre-packaged ham with the certified gluten free label or have a conversation with the person at the deli counter to explain that you are sensitive to even small amounts of gluten. Some might even agree to wipe down the equipment before slicing your ham. Also, look for ham that does not contain additives like sugar and artificial flavors.
