I love a good, hearty breakfast…like a plate full of pancakes, sausage and fruit. But let’s be real, I don’t have time to make that every day. That’s why I love chia seed pudding. I can easily mix this recipe together, place it in the fridge and then wake up to a delicious breakfast. Don’t let the easiness of this recipe fool you, it’s a nutritious choice as chia seeds are rich in fiber, antioxidants, minerals and protein!
Ingredients to Make Chia Seed Pudding:
- Coconut milk (or preferred milk/dairy free milk)
- Chia seeds
- Vanilla extract
- Cinnamon
- Apple
- Peanut butter (or any other nut butter)
How to Make Cinnamon Apple Chia Seed Pudding
Grab the ingredients listed above, a medium sized Tupperware container and you are ready to get started! Add the coconut milk, chia seeds, vanilla extract and cinnamon to the container and whisk until combined. Let sit for 1 minute and then use a spoon to stir again. Place in the refrigerator overnight. When you are ready to serve, cut the apple into small pieces. Scoop the chia seed pudding into a bowl and top with the apples and peanut butter.
Is Chia Seed Pudding Paleo Friendly?
This Cinnamon Apple Chia Seed Pudding can easily be made paleo friendly. The only ingredient that is not paleo is the peanut butter. There is a easy fix to that…simply swap the peanut butter for your favorite nut butter, like almond butter. If you make this change to the recipe, then it will be paleo friendly and it tastes just as good! If you are following the paleo diet, just make sure to use pure vanilla and check the ingredients. You could also use maple syrup instead of the vanilla extract.
How to Store Left Over Chia Seed Pudding
You can store the left over chia seed pudding in the same Tupperware container that you made it in. It will keep in the refrigerator for up to 5 days! I love to meal prep this chia seed pudding on the weekends (I double the recipe) and then have it most of the week for breakfast.

1/4 cup chia seeds
1.5 teaspoons vanilla extract
1 teaspoon cinnamon
1 apple
Peanut butter (or nut butter if paleo)
Directions
- Whisk together the coconut milk, chia seeds, vanilla extract and cinnamon in a Tupperware container. Let sit for 1 minute and then use a spoon to stir again. Place the pudding in the refrigerator overnight.
- When you are ready to serve, cut the apple into small cubes. Scoop the chia seed pudding into a bowl and top with the apples and peanut butter.
