Thanksgiving dinner is just not the same without a rich, flavorful gravy that is drizzled over your entire plate! Trust me, I know firsthand because there were many years I skipped the gravy after being diagnosed with celiac disease. I knew that store bought gravy can often have hidden gluten in it and I often couldn’t eat the gravy from the turkey because it was cooked with regular stuffing. Well, I decided I wasn’t going to miss out for another year so I whipped up my own homemade gravy that’s made with real ingredients yet tastes just as good as the original!

Ingredients:

  • Turkey drippings
  • Ghee-you can replace this with coconut oil or butter but I find that ghee gives it the best flavoring
  • Salt
  • Pepper
  • Water
  • Arrowroot powder-can use tapioca starch in replacement

Let’s get started by going over what you’ll need in your kitchen to make this 10 Minute Whole 30 Gravy!

  • Roasting pan
  • Strainer

  • Small bowl
  • Measuring cups and spoons

How to Make Homemade Gravy with Turkey Drippings

Strain the turkey drippings from the bottom of the roasting pan into a measuring cup. Place the roasting pan, without the turkey, onto two burners on the stove. Add the drippings, ghee, salt, pepper and water and set the burners to high heat. Mix together the water and arrowroot in a separate bowl to create a roux then add to the gravy. Cook on high heat until the gravy starts to boil and then reduce to low heat. Make sure you are constantly stirring the gravy to avoid sticking. Continue to cook and stir on low heat until the gravy becomes a thick consistency, about 5-10 minutes.

Do I need to use the roasting pan to make the gravy?

I find that using the roasting pan is the best method for this recipe. It allows you to get all the flavors and evenly cooks the gravy. However, if you do not have a roasting pan you can also make this recipe using a saucepan or skillet.

What if I have more than a cup of turkey drippings?

This recipe calls for one cup of turkey drippings. Therefore, if you have more than one cup you will need to adjust the rest of the ingredients. However, I would suggest not making more than a double batch due to the arrowroot flour. Too much could leave you with the wrong consistency. If needed, you could make two separate batches to make sure the consistency comes out right.

What can I substitute the ghee with?

The ghee is the perfect addition to this recipe because it adds a rich, buttery flavor. However, I know that some people cannot handle ghee. You can use coconut oil or dairy free butter instead.

What can I substitute the arrowroot powder with?

The only substitution for the arrowroot powder I would recommend would be tapioca starch. I haven’t tried any other flours and, therefore, cannot say whether or not they would work in this recipe.

Can I make this gravy ahead of time?

This recipe is best when it is made on the day of. However, it still tastes good if you make it ahead of time. Simply follow the directions below and then place it in an airtight container in the refrigerator. It with be much thicker once it cools but will go back to the right consistency once it is reheated in the microwave or on the stove.
