I don’t know about you, but I could eat taco inspired recipes just about every day of the week. This Paleo Pulled Pork Burrito Bowl takes all the taco flavors and ingredients and combines them into one glorious bowl. The tender pulled pork is made in the crockpot which makes this recipe so easy to make! Just add your favorite toppings for a hearty, filling & nutritious meal!
What Cut of Meat to Use for the Pulled Pork?
I have found that, for this recipe, the best results come from the pork shoulder. However, I have also used pork tenderloin many times and it works out great too. The key to getting the best pulled pork is the crockpot and letting it slowly cook until it is tender and juicy.
What to Serve with Pulled Pork?
One of my favorite things about this Paleo Pulled Pork Burrito Bowl is that there are so many options when it comes to how to make it. It’s also a really easy way to get several plant-based foods in your diet! I usually keep it simple with tomatoes, avocados, coleslaw cauliflower rice and lettuce but it really comes down to your personal preference. For example, you could add beans, corn, cheese, guacamole, onions, rice, salsa or anything else you can think of!
How I Make My Coleslaw
I don’t complicate things when it comes to the coleslaw I use in this recipe. All I do is combine a bag of coleslaw mix with Primal Kitchen’s Mayo with Avocado Oil. I don’t have measurements because I just go by the consistency I personally like. I usually start with a couple spoonfuls of mayo to see how it looks and add in a few more if needed.
How to Reheat Pulled Pork?
This pulled pork can be easily reheated in the microwave. I like to store my pork separately in the refrigerator. When I am ready to reheat it, I add it to a bowl with the other ingredients that need to be warmed. Then I top it with the rest of the ingredients (tomatoes, avocados, lettuce, etc.). This recipe is so easy to reheat making it perfect for work lunches or busy weeknight dinners!
What to Do with Left Over Pulled Pork?
This Paleo Pulled Pork Burrito Bowl makes a great meal prep option. You can use the left overs all week for an easy lunch or dinner. If you don’t like eating the same thing over and over again, you could also make an actual burrito with it by adding it to tortillas! The same toppings would work great with this option too!
How to Make Paleo Pulled Pork Burrito Bowl
Step One: Set it and Forget it
Place the pork into the crockpot. Add the cumin, paprika, chili powder, cayenne, salt and pepper on top of the pork. For best results, cook in the crockpot on low heat for 8 hours. If short on time, cook on high heat for 4 hours.
Step Two: Shred and Top
Remove the pork from the crockpot and shred. Add your preferred toppings to a bowl and top with the shredded pork. My favorite toppings are tomatoes, shredded lettuce, avocados, and coleslaw.

Directions
