Additional pulled pork meal ideas
If you aren’t the type of person who enjoys throwing all your food together in a bowl, don’t worry this pork can be used for other meals as well! Try making it a sandwich by layering it between bread and topping it with lettuce, cheese and a tomato slice. It also can be made into a wrap using lettuce or grain free tortillas. It can easily be turned into a fun, kid friendly option by using chips or crackers to scoop it out of a bowl. I have even eaten this pork plain with a side of veggies. Just like the toppings, this pulled pork has endless options when it comes to meal ideas!
How I make my coleslaw
I am as basic as it gets when it comes to my coleslaw. All I do is buy a bag of coleslaw mix and combine it with a few tablespoons of Primal Kitchen’s Mayo. I don’t measure how much of each I add, I just go by how it looks! If I’m feeling extra, I’ll add in a dash of salt and pepper!
Directions:
Step One: Place the pork loin into the crockpot. Chop the onion and lay the onion and pineapple slices on top of the pork. Mix together the ingredients for the sauce and pour it into the crockpot. For the best results, cook on low heat for 8 hours. If short on time, cook on high for 4 hours.
Step Two: Remove the pork from the crockpot and place it into a large bowl. Use a fork or hand mixer to shred the pork. Strain the juice from the crockpot, add about 1 cup to the pork and continue to shred until combined. Serve over cauliflower rice and add your favorite toppings, like tomatoes, avocados, coleslaw, and lettuce.
The ultimate meal prep recipe
This Crockpot Pulled Pork Bowl is so easy to meal prep for the week ahead. On the weekend, cook the pork in the crockpot following the directions below and prep all your toppings. If you are meal prepping for work lunches, place the pulled pork and other ingredients that need to be reheated in microwavable safe containers. Add the toppings that don’t needed to be heated in separate containers or Ziploc bags. During the week, all you will need to do is grab both containers and toss it in your lunch box. So easy…and delicious!
