These 6 Ingredient Coconut Flour Pancakes are a delicious way to start your morning! They are so simple to make and the ingredients that are needed are probably already in your pantry! This recipe is Biphasic and Paleo friendly and doesn’t contain any gluten, grains, lactose, nuts or refined sugar.
If I was forced to pick one type of food to eat the rest of my life, it would most definitely be breakfast food! When I started the biphasic diet to heal my SIBO, I knew I was going to miss my weekend pancakes. So, I decided to create a recipe that allowed me to still enjoy my favorite meal of the week! To my surprise, it only took 6 simple ingredients to create fluffy pancakes that satisfied my breakfast cravings.
Ingredients
- Coconut flour (my favorite brand is Bob’s Red Mill)
- Cinnamon
- Water
- Ghee
- Eggs
- Pinch of salt
Biphasic Diet Friendly
If you are following the biphasic diet, you want to skip the maple syrup and possibly the strawberries. If you are not in the most restrictive phase and have reintroduced fruit, then you can add the strawberries (or other fruits). When I was in this phase, I would add some melted ghee on top and it would do the trick!
All the Toppings
I find that there are two types of pancake eaters in the world. Those who love to add all the toppings and those who prefer their pancakes plain. I happen to be the type of person who loves to add toppings. Here are some of my favorite toppings that can easily be added to this recipe…
- Fruit (strawberries, blueberries, bananas, raspberries, etc.)
- Maple syrup
- Chocolate chips
- Cacao nibs
- Nut butter
- Walnuts
Not all of these toppings are biphasic diet friendly so make sure you check if you are following this diet!
How to Make 6 Ingredient Coconut Flour Pancakes
These pancakes are so easy to make! Simply mix together the coconut flour, cinnamon, and salt. Make sure to whisk thoroughly to make sure you get the clumps out of the coconut flour. Add the water, melted ghee, and eggs to the dry mixture and whisk until combined. Scoop 1/4 cup of the pancake batter and pour it onto the griddle. Cook on the griddle at 250 degrees for 10 minutes. It should make three pancakes.
If you don’t have a griddle, you can also cook them on the stove using a square griddle pan or skillet. Heat the pan on high heat for 1-2 minutes before adding the batter. Turn down to medium heat, add the batter and cook the pancakes for 6-10 minutes.
